And salt potatoes are the best potatoes you can eat.
They have a nice, tender potato flavor that’s reminiscent of salt water.
And they taste good!
They’re great with any of your favorite potatoes, especially potato salads.
Here’s how to make a salt potato.
To make salt potatoes: Heat a large skillet over medium-high heat.
Add about 1/4 teaspoon of salt and bring to a boil.
Reduce heat and simmer, covered, until potatoes are fork tender, about 10 minutes.
When potatoes are done, they should be fork tender.
Drain potatoes and let cool completely.
To prepare the potato salad: Heat the oil in a large saute pan.
Add the potatoes and cook until soft, about 2 minutes.
Add vinegar and season with salt and pepper to taste.
Stir in the remaining salt.
Add potatoes to a bowl and toss with the dressing.
Garnish with parsley, and serve warm.
You can also use leftover salt from potatoes or leftover onion.
